Baked Celeriac Fries

Baked celeriac fries are a great meat-free alternative to classic fries and make 4 servings. The celeriac is briefly parboiled, coated in oil and seasoning, then baked until golden. Serve them with dips, pesto or fresh vegetables. Preparation takes about 60 minutes.

Method

Bake the celeriac fries in the oven. Choose the amount according to taste and use the seasoning you like.

First peel the celeriac, then cut it into slices about 1 cm thick and cut these into 1 cm thick fries. Put them into a pot of boiling salted water and simmer for about 1–2 minutes. Do not cook them until soft! You can also add a little vinegar or lemon juice to the water.

Drain the parboiled fries, let them drain well and return them to the pot without water. Drizzle with oil, sprinkle with seasoning to taste and mix so that every fry is coated in oil and seasoning.

Spread the prepared fries on a baking tray lined with baking paper, arrange them evenly but not too densely, and bake at about 220–240 °C until golden. After baking, season with salt and serve.

Do not bake the fries in a thick layer, otherwise they will start to steam instead of roasting!

If you love garlic, you can leave out the seasoning and about 5 minutes before the end of baking stir in garlic crushed with salt and oil, then finish baking until golden.

Serve them with various dips and pestos, or with fresh vegetables.

08.

They can also be prepared by frying in a pan (which we prefer). Fry them over high heat on all sides until golden in a little oil.
