Fancy a taste of Asian cooking at home? Try wheat udon noodles – this Japanese speciality, close to traditional ramen, is perfect in a stock made to a recipe by chef Roman Paulus. Alongside familiar ingredients such as parsley, celeriac, carrot, ginger and garlic, you will also find exotic ones like shiitake mushrooms and green kombu seaweed; roasted beef ribs and a pork trotter give it a deep, strong flavour. Once the stock is ready, simply add cooked beef and plenty of toppings – garlic chips or fried tempura, for example.
