These cheese fritters pair the delicate flavour of blanched leek and broccoli with sharp hard cheese. They come together quickly and are ready in half an hour. Fry them until golden and drain off the excess oil on kitchen paper. They taste great hot or cold.
Blanching the vegetables: Clean the leek and cut it into small cubes. Break the broccoli into tiny florets or chop it into pieces. Blanch both for 2-3 minutes in boiling water, drain and leave to cool.
Preparing the mixture: Then coarsely grate the cheese over the vegetables, add the fried onion, stir in the eggs with a little milk, season with salt and pepper, mix and gradually add the breadcrumbs. Mix thoroughly.
Frying the fritters: Fry in oil on both sides, ideally in a pancake pan, but a frying pan works too.
Draining the oil: After frying, drain the excess oil from the fritters on kitchen paper.
