Fusilli with Chicken and Homemade Tomato Pesto

Fusilli with chicken, courgette and cherry tomatoes is fragrant with fresh basil and homemade tomato pesto made from sun-dried tomatoes, Grana Padano and walnuts. Method

01.

Put the pasta into boiling salted water and cook for about 10 minutes, not completely tender, as it will finish cooking in the sauce.

Slice the garlic, put it into a blender, add the sun-dried tomatoes, grated Grana Padano, chopped or ground walnuts and chopped basil, and blend. Pour in a little olive oil and blend again. If needed, thin it with a little more olive oil.

Pour a little olive oil into a heated pan, fry the chicken breasts cut into cubes, season with salt and pepper, add the courgette cut into strips, pour in the wine and let it bubble briefly. Add the cooked pasta and a little pasta cooking water, stir in about 8 tbsp tomato pesto, the cherry tomatoes cut into quarters and the chopped basil, and mix well.

Serve the pasta in a deep plate, sprinkle with grated Grana Padano, season with pepper and garnish with a sprig of basil.
