A versatile chocolate glaze made from butter, chocolate and cocoa is perfect for pouring over pastries, cakes and small sweets. It comes together easily in a water bath and is ready in fifteen minutes. No sugar goes into it, so the chocolate flavour stays beautifully intense.
Melt the butter in a water bath, add the broken-up chocolate and the sifted cocoa.
Mix everything thoroughly until the chocolate has melted – do not boil. The glaze is very runny.
Transfer it to a microwave-safe bowl, let it cool for a moment and you can start decorating.
Once the glaze thickens, simply put it in the microwave on the highest setting for a few seconds, stir and you can decorate again.
Never add sugar to this glaze. It is excellent for small sweets, which you can dip straight into it.
