This homemade lemon and orange concentrate is ideal for making a refreshing juice. The fruit is cooked with its peel, blended with sugar and citric acid, and turned into a base that you store in the fridge once cooled. Dilute the concentrate with water to taste.
Wash the lemons and oranges thoroughly and cut them, peel and all, into larger cubes; you can trim off the ends. Put them in a saucepan, pour water over them and simmer for about 1 hour until the fruit is soft. Blend the cooked mixture with a stick blender into a purée, add the sugar and citric acid and blend once more.
The resulting mixture should make about 2 litres. Once cooled, pour it into PET bottles and store in the fridge.
This concentrate should be enough to mix with 10 litres of water. Before serving, pour the concentrate into glasses, top up with water to taste and stir.
