A traditional Indian drink that both refreshes and warms you up. A blend of spices is simmered in water and then finished with black tea, milk and sugar. You can easily adjust the strength of the drink by how long you let the brew simmer.
Crush the cardamom in a mortar.
Put all the spices into a litre of cold water and bring to the boil. Let the mixture simmer for about 10 minutes, though the timing depends on your taste – after 10 minutes the brew is quite sharp.
Add the tea and, after one to five minutes, add the sugar. After 2–5 minutes add the milk and bring to the boil again. Simmer for a moment, take off the heat, strain and drink.
