Roman Vaněk's Homemade Bread

The dough needs to be rolled tightly before the final rise so that it does not spread during baking and the loaf stays nice and tall. After rolling, you can leave it to rise in a proving basket, or place it straight on a baking tray and bake it.

Method

01.

Mix the plain flour, rye flour, vinegar, yeast, water, salt and caraway seeds.

Put the mixture into the bread machine and start the Dough programme.

After about an hour, remove the dough from the bread machine (it was supposed to stay there for another half an hour) and transfer it to a proving basket dusted with rye flour; leave it to rise there for about 50 minutes.

Then turn the dough out onto a baking tray lined with baking paper and place it in a steamed oven preheated to 250 °C.

05.

After 3 minutes, open the oven to let the excess steam escape, then continue baking for 1 hour at 180 °C.
