Sweet rolls from Svatá Helena prove that a roll doesn't have to be just the dry savoury pastry you know from the shops. The soft yeast dough with butter and lard is scented with lemon zest and lets your favourite filling shine – chocolate, coconut, nuts, poppy seeds or cocoa. After baking, the rolls are brushed with a sweet sugar syrup.
Dough preparation: Mix both flours, the salt and chopped fat, add the sugar, egg and lemon zest, crumble in the yeast, pour over 20 ml milk and leave to stand for about 7–10 minutes.
Dough rising: Then pour in the remaining milk, knead into a smooth dough and leave it to rise for about an hour.
Shaping the balls: Tear off pieces of the risen dough, shape them into balls and leave them to rise again.
Filling and shaping: Roll out the balls, fill them with the chosen filling and wrap them into crescent rolls. Heat the oven to 200 °C.
Baking: Transfer the rolls to a baking tray and leave them to rise on the tray for about 10 minutes. Brush them with beaten egg and bake at 200 °C for about 20 minutes.
Finishing: As soon as the rolls are baked, brush them with the sugar syrup, which is made by boiling the vanilla sugar packets in the water.
