Yeast-Raised Czech Sweet Buns with Two Fillings

Discover the charm of homemade yeast-raised koláčky with two fillings, also known as dvojctihodné koláče. This recipe shows you how to make a yeast starter from yeast, sugar, milk and flour, and then turn it into a firm, elastic dough. The koláčky are filled with quark and plum jam, but you can try other combinations such as walnut, poppy seed or fruit.

Method

First, leave the crumbled yeast, sugar, lukewarm milk and a tablespoon of flour in a warm place to make a yeast starter.

Make the dough from the remaining sifted flour, one egg, oil, a pinch of salt, softened butter and the prepared starter. Work it by hand or with a mixer into a smooth mass. Leave the dough to rise in a warm place for at least 30 minutes.

Meanwhile, prepare the quark filling and crumb topping using the tricks from the Lidl Culinary Academy. Make the plum filling by simmering plum jam, ground sponge biscuits and tuzemák.

Briefly knead the dough again on a work surface and roll it out into a sheet about 1 cm thick, then cut out circles with a ring (or a glass). Put the quark filling on each circle and seal it. Place the filled balls on a baking tray lined with baking paper, leaving enough space between them because the koláčky will rise. Press a dimple into each one with your thumb and fill it with the plum filling. Brush with beaten egg, sprinkle with crumb topping and leave to rise for another 10 minutes. Bake in an oven preheated to 170 °C for about 25 minutes until golden brown.
