Sides in Asian cuisine are certainly not just about rice. Potatoes are used just as often, as this recipe from chef Roman Paulus proves. During his travels around Sri Lanka he discovered a local side dish made from stir-fried potatoes and plenty of typical Ceylon spices. The potatoes are first boiled in water with turmeric, which gives them a beautiful yellow colour, and then stir-fried in a pan with chilli, ginger, curry leaves, cinnamon and several other Asian spices and herbs. They make a great side dish, but also a light dinner on their own.
