Baked broccoli and chicken with sour cream is a hearty dish that combines crisp broccoli, pan-fried chicken and a delicate creamy sauce with cheese and herbs. First, steam the broccoli briefly to keep its colour and crunch, and fry the chicken pieces. Then pour over the cream mixture and bake until golden. Serve with boiled potatoes and a vegetable salad, or with tartar sauce if you like.
Clean the broccoli, break it into florets and steam for about 7 minutes only, so that it keeps its colour and stays crisp. Then take the broccoli out and let it cool.
Heat 1 tsp of oil in a pan.
Pound the chicken thigh steaks thinly, season with salt, sprinkle with grill seasoning and cut into pieces about 3–4 cm in size, placing them straight into the hot pan. Turn the browned meat and remove from the heat.
In a bowl, whisk the eggs with salt and a pinch of pepper, add both the thick sour cream and the sweet cream, the coarsely grated cheese and the chopped herbs, then add more salt if needed.
Grease a baking dish with butter, add the broccoli and chicken meat with any juices, stir lightly and pour over the cream mixture. Shake the dish gently so the mixture spreads everywhere, cover with a lid and put into an oven preheated to 200°C. After 15–20 minutes, when the sides start to bake, uncover the dish, reduce the oven to 180°C and bake until reddish-brown, until the whole mixture, especially the centre, is cooked through. Serve with boiled potatoes and a vegetable salad, or with tartar sauce if you like.
