Looking for an original party snack, or just a treat for a night in front of the TV? Try this baked bread from chef Roman Paulus – we cut it into cubes, fill it with sliced cheese and pour over homemade garlic butter. Gouda, Edam or the slightly more aromatic Emmental all work beautifully. A simple garlic butter is all it takes to bring out even more flavour and aroma.
Mix the melted butter well with the finely chopped garlic, herbs, salt, pepper and chilli to make a garlic butter.
Cut the bread into cubes with a serrated knife, keeping the base intact – as if you were turning the loaf into a hedgehog.
Fill the gaps with the sliced cheese. Then pour over the prepared herb butter and bake in an oven preheated to 180 °C for 20–25 minutes on the fan setting.
Serve while still warm so that everyone at the table can pull off their own piece and enjoy it.
