Nuoc Cham (Vietnamese Dipping Sauce for Spring Rolls and Bún Chá)

Nuoc Cham is a classic Vietnamese dipping sauce that we know from Vietnamese restaurants and that is served with spring rolls, Bún Chá, Bun Bo Nam Bo or Pho Bo soup. We make it from carrot and green papaya, which are pickled in a sweet-and-sour mixture of rice vinegar, sugar and fish sauce. The recipe follows the traditional method that chef Roman Paulus learned directly in Hanoi. The sauce is simple and quick – you just need to keep the right ratio of ingredients.
