Think a good sorbet has to be made from fruit alone? Chef Roman Paulus proves otherwise. In this refreshing sorbet the leading flavour is blended fresh basil, rounded off with lemon juice. It comes together in no time and will please absolutely everyone – grown-ups perhaps with a shot of good vodka or a glass of prosecco.
Heat the sugar and water until the sugar dissolves. Then turn off the heat, pour in the lemon juice and leave the base to cool on the worktop and afterwards in the fridge.
Blend the chilled base with the fresh basil leaves and pour it straight into an ice cream maker, where it needs about 40 minutes. Put the finished sorbet in the freezer for another 30 minutes to firm up.
Serve the sorbet in a frozen or at least well-chilled glass, garnished with a leaf of fresh basil.
