This dessert is certainly not made for a diet, but every now and then it does no harm. Preparing the Ptačí mléko jelly is a little more demanding, but with a bit of skill you will manage it easily. The decoration is entirely up to you – you can use fruit compote, fresh or canned fruit, granola, or just chopped nuts.
Soak the gelatine in cold water for 30 minutes, or follow the instructions on the packet.
Meanwhile, cream the egg yolks with the sugar, gradually pour in the milk and stir in the flour. Place the pot in a hot water bath, bring to the boil and, stirring constantly, let the mixture come to a boil. Then remove the pot and leave to cool.
Stir the softened butter into the mixture and whisk the cream again with a whisk.
Gently heat the gelatine over a low heat.
Whisk the 10 egg whites to stiff peaks and pour the cooled gelatine over them. Mix carefully.
Divide the cream between bowls and leave to set in the fridge. Before serving, decorate the Bird's Milk Jelly with chocolate or perhaps strawberries, other fruit or nuts. For an even greater effect, you can use fruit compote.
