Brabantské dortíčky are one of the most popular Czech Christmas cookies. Nutty rounds are filled with jam, topped with a chocolate coating and a hazelnut. They simply cannot be missing from our Christmas table and taste best with coffee.
First mix the softened butter with the plain flour, potato starch, ground nuts, sugar and a little ground cinnamon and work it into a smooth, supple dough. Then leave the dough to rest.
Cut out circles of any size from the rested dough with a cookie cutter and bake them in a preheated oven at 170 °C.
Prepare the chocolate coating in a bain-marie from a quarter of the 100% fat, the cocoa, sugar and milk powder. Fill the baked circles with jam and pour the chocolate over them. Finally decorate them with a hazelnut.
Leave the Brabantské dortíčky to set, then let them mature in a tin, and serve – ideally with coffee.
