Yeast dough is the starting point for many popular cakes and pastries. It takes care and patience to prepare, but the result is worth it. Do you know how to tell that the dough is ready and you can start working with it?
First make a yeast starter from the yeast, warm milk and sugar. Once it has risen, add the remaining ingredients and work everything thoroughly until bubbles start to form on the dough.
After the dough has risen, divide it into 210 g pieces and roll them out on baking paper into rounds.
Mark the edges with your fingers and brush them with beaten egg.
Then spread the quark filling over the middle, using 3 tbsp per kolach. The filling must be neither too runny nor too thick, simply easy to spread.
Using a piping bag with a nozzle, decorate, or 'merhovat', with patterns of poppy seed filling and plum butter. Decorate with raisins and almonds.
Place in a preheated oven at 180 °C and bake each kolach for about 20 minutes, until the edges turn pink.
While still hot, pour over the cream mixed with lemon juice and sugar, or decorate with whipped cream once cooled.
