Cibulák is a hearty Czech onion spread made with sautéed onions, garlic and sweet paprika. Potatoes give it a smooth texture, while capers and mustard add a pleasant tang. Serve it on garlic-rubbed toast or on open sandwiches.
Peel the onions, cut them into pieces and soften them in the oil. Add the chopped garlic, paprika, salt and tomato purée and fry for another 2-3 minutes. Then remove from the heat and leave to cool.
Mix the cooled mixture with the grated potatoes using a hand blender, and adjust the seasoning if needed.
Add the chopped capers, red onion, ketchup, mustard, Worcestershire sauce and gradually add salt, pepper and hot paprika.
The spread should be lightly piquant. Finally stir in the egg yolk and leave the spread to stand for a while.
Serve with garlic-rubbed toast or on open sandwiches.
