Coconut Cut-Out Cookies

Coconut cookies made from a buttery dough, cut into various shapes and baked until golden. Once cooled, you can coat them with chocolate, roll them in icing sugar, sprinkle with coconut, or sandwich them with cream filling. Perfect for a festive table or with afternoon tea.

In a bowl, mix the plain flour with the sugars and coconut, add the softened butter and egg, and work into a dough. Leave the dough to rest overnight in a cool place. Then knead it again, roll it out into sheets about 3–4 mm thick, and cut out various shapes. Transfer the shapes to a baking tray lined with baking paper and bake in a preheated oven at 160 °C until golden.

If you prefer less sweet cookies, once cooled, brush the pieces with chocolate or dip them partly in chocolate and sprinkle with coconut before the chocolate sets. If you like very sweet cookies, you can coat the still-warm pieces in icing sugar and store them in a box. Finally, you can sandwich the finished cookies with buttercream or cooked cream filling, then decorate the top piece according to your taste and imagination.
