Mushrooms are among the most popular fungi in Czech cooking and can be prepared in many ways – this creamy soup is one of them. It is filling as well as healthy: mushrooms have antioxidant effects, support digestion and are a source of vitamins B1 and B2. The recipe takes 30 minutes and serves five.
Sauté the cleaned and sliced mushrooms in butter, season with salt and spices and pour over boiling water from the kettle. Add the stock cubes and simmer for about 15 minutes.
Finally, thicken the soup with a roux made from flour and cream and simmer it so the floury taste cooks out. Sprinkle with fresh parsley when serving.
