This pea soup is a nod to the Czech first-republic kitchens, where soup was served in the finest porcelain. Chicken stock, frozen peas and a mild leek with garlic form the base, while homemade croutons and fried bacon finish it off. The recipe is simple and ready in half an hour, yet it tastes like a festive dish.
Heat the butter in a pot and briefly fry the onion until translucent. Add the garlic and the green part of the leek and fry briefly until soft. Pour in the chicken stock, bring briefly to the boil, add the frozen peas and cook only until the peas soften; this takes about 4 minutes.
Blend the soup thoroughly, and if you want it really smooth, you can pass it through a sieve. Season with salt and freshly ground white pepper.
Cut the toast bread into cubes and bake in the oven until golden. Fry the garlic paste in butter and stir it through the toasted croutons. Fry the bacon and toss the croutons in the rendered fat.
