Mushroom scramble with eggs is a quick meatless Czech classic you can make in twenty minutes. Just fry the onion, add the mushrooms with garlic and caraway, and finally stir in the beaten eggs. Serve the finished scramble with fresh bread or garlic toast.
Fry the onion in a tablespoon of butter or in a piece of chopped bacon.
Add the chopped, briefly pre-cooked and drained mushrooms, fry them, season with salt, pepper, caraway and garlic, then stir in the beaten eggs and let them set, stirring constantly.
Serve with fresh bread or garlic toast.
TIP: You can also make the scramble with bacon or lean ham and sprinkle it with fresh spring onion.
