Frenštátské škračky are hearty potato pancakes flavoured with garlic, caraway and marjoram. They are served with sautéed chicken livers, onions and eggs, which are quickly prepared in a pan. This is a satisfying dish for lovers of traditional Czech cooking.
Preparing the pancakes: Peel the potatoes and grate them (start grating on a fine grater until about two thirds are done, turn the grater to the fine "carrot" side, grate one clove of garlic, finish grating the potatoes, turn the grater back and grate another potato), splash with milk, add salt, pepper, caraway, marjoram, flour and egg, and mix thoroughly. Fry 4 thicker pancakes in hot lard.
Preparing the liver: Cut the cleaned livers into strips and mix with marjoram, caraway and pepper. Cut one onion into half-moons and put it into a pan with heated lard.
Sautéing the liver: Fry the onion until translucent, add the livers and sauté over high heat. Finally add the cracked eggs, season with salt, mix, and once the eggs set, serve.
Serving: Place the livers on a potato pancake, garnish with fresh parsley and the second onion cut into half-moons.
