So simple and so rewarding! A dough of plain flour, lard and sauerkraut is all you need - just work it together, roll it out and slide it onto a baking tray. Once baked, you only separate the squares with a knife and they are ready to serve. Swap the lard for oil and vegetarians can enjoy them too - zelňáky make a hearty side dish for soup or a snack on their own.
On a work surface, work the flour with the lard, cabbage, salt and one egg.
Roll out a flatcake about half a centimetre thick, transfer it to a baking tray with the rolling pin, cut it into squares, brush with the beaten egg and sprinkle with marjoram.
Bake at 200 °C until golden brown. Then separate the squares from one another with a knife.
