Pound the chops, season them with salt, brush both sides with mustard, sprinkle with ground caraway and coat in flour.
Grate the cheese coarsely and crack the eggs into it.
Fry in hot oil for about 5 minutes on one side first. Then turn the chops over and spread the cheese and egg mixture over the fried side. Fry for another 5 minutes or so, until the egg sets.
Serve with roast potatoes as a side dish.
