Delicious simple muffins are made from just a few basic ingredients. The batter is mixed in one bowl, can be flavoured with cocoa or lemon zest, and is ready in half an hour.
In a bowl, beat the sugar, vanilla sugar and egg. Add the oil, pour in the milk and mix. Then add the sifted flour and baking powder.
Finally, fill the muffin cases almost to the top. With 5.5 cm diameter cases, the batter makes about 26 muffins. If you usually have nothing else to hand, add a tablespoon of cocoa or grated lemon zest; these are the muffins we like best. If you do not have a muffin tin, use 2–3 paper cases nested inside each other so the batter does not run out in the oven.
Bake the muffins for 25–30 minutes at 150 °C.
Serve the muffins as a delicious sweet treat with coffee or tea.
Tip for making muffins: Improve the muffins by adding pieces of chocolate, nuts, raisins or jam to the batter.
