This egg spread is a Czech classic that works beautifully on chlebíčky, canapés or plain bread. Processed cheese makes it lovely and creamy, mustard gives it a bit of bite and pickled gherkins add freshness. It comes together quickly and you can easily tweak it with whatever you have in the fridge.
Cook the eggs in boiling water for 10 minutes, then cool them rapidly and peel.
Cut the cooked eggs in half, put the yolks into a bowl and mash them.
Add the pomazánkové máslo, processed cheese and mustard to taste, and whisk everything together.
Chop or grate the egg whites, gherkins, peeled onion and salami into small pieces, add them to the bowl with the yolks and mix well.
Season the spread with salt, pepper and fresh herbs if you have them.
