Fish fillets bake in a nest of spaghetti bound with a cheese béchamel, while small mushrooms coated in butter roast around them. The recipe is easy on ingredients and time, yet looks impressive on the plate. It works beautifully as a festive lunch or a relaxed dinner.
Cook the spaghetti and rinse it with cold water so it does not stick together.
Make a very thick béchamel from the butter, flour and milk, stir in the grated Emmental and season with salt and pepper. Mix the spaghetti into the cheese béchamel and, using a fork, shape it into 4 round nests on a buttered roasting tin.
Season the fish fillets with salt and pepper, sprinkle with your favourite seasoning, place them in the middle of the nests and top each with a small slice of butter.
Clean the mushrooms and put them into a bowl with melted salted butter. Toss them so the mushrooms are coated in butter all over, then scatter them into the free spaces on the baking tray. Bake for about 20 minutes at 230 °C.
