Grandma's Czech Potato Soup with Dried Mushrooms and Marjoram

Method

For the bramboračka, cut 1 peeled carrot, parsley root and potatoes into small pieces. Put everything into a larger pot, add one whole carrot and the halved celeriac. Pour over 1 litre of water, add the stock cube, season with salt and bring to the boil.

Pour hot water over 2 handfuls of dried mushrooms and after 10 minutes add them to the pot with the vegetables, along with the water. After 20 minutes the vegetables should be soft. Then remove the celeriac, whole carrot and onion from the soup.

For the roux, melt 50 g of butter in a small saucepan, add 50 g of flour and stir until the roux turns golden. Immediately pour it into the boiling soup and simmer for about 10 minutes.

Finally, crack the egg into a glass, whisk it with a fork and stir it into the boiling soup. Flavour the soup with a handful of marjoram crushed between your palms and 2 cloves of crushed garlic. Add salt and pepper to taste. The soup smells wonderfully of mushrooms.
