Peeling garlic is time-consuming, but without it the dish wouldn't be the same. These green beans with butter, garlic, thyme, soy sauce and honey are ready in 30 minutes. Serve them as a side dish with meat, or enjoy them on their own as a meatless meal. If you want to make peeling easier, try the hot water trick.
Preparing the beans: If using fresh beans, first boil them in salted water for 6–10 minutes and drain. For frozen beans, use them straight away, just rinse and drain them in a colander. Peel and finely chop the garlic.
Frying the garlic: Heat a little butter and a drop of oil in a high-sided frying pan, add the garlic and let it fry for a moment. Then add the beans and a teaspoon of thyme.
Finishing the dish: When the beans start to soften after about 7 minutes, season them with salt, stir, splash in the soy sauce and add a tablespoon of honey. Stir and sauté for a little longer until the flavours come together.
Sprinkle with grated Parmesan on the plate. Serve as a vegetable side dish with grilled or similarly prepared meat, or as a meal on its own.
