You can shape the halušky with a knife, a spoon or a special halušky maker. We boil them in salted water and, after draining, coat them with fat so they do not stick together. Serve them with bryndza, crisp bacon and, if you like, a little sour cream.
Making the dough: Grate the potatoes on a special grater, season with salt, add the flour and work into a firmer dough.
Cooking the halušky: Press the halušky into boiling salted water and stir gently. Once they float to the surface, drain them immediately. Let them drip dry, but do not rinse them.
Preparing the bryndza and bacon: Meanwhile, melt the bryndza with a tablespoon of cream in a small saucepan, and in a second saucepan render the finely chopped bacon until crisp.
Serving the halušky: Pour the bryndza and bacon, including the rendered fat, over the halušky. You can also pour over a little sour cream.
