Roast chicken with butter, garlic and fresh herbs is a great choice for lunch or dinner. Marjoram and rosemary give the meat a rich aroma, while paprika and caraway add a gentle kick. Short preparation is all it takes, then the oven does the rest.
Wash the chicken, cut it into portions and dry it with paper towels. Season it with salt on both sides and sprinkle with paprika and caraway.
Arrange the fresh herb sprigs on the bottom of a roasting tin, then place the seasoned chicken pieces on top, skin side down.
Put a small knob of butter on each piece, add the whole unpeeled garlic cloves, pour in a little water and put the tin in the oven.
Roast at 170 °C for about 30 minutes, basting occasionally. Then turn the chicken pieces skin side up and roast until golden brown.
