You don’t have to save kebab just for eating on the go. Juicy chicken thighs are marinated in Greek yogurt, paprika and tomato paste, threaded onto skewers and roasted until golden. Slice the meat into pita bread and fill it with hummus, Balkan cheese, vegetables and yogurt. With Roman Paulus’s recipe, you can make a homemade dish that will bring guests to the table.
Cut the chicken into smaller pieces and marinate them with salt, pepper, olive oil, Greek yogurt, hot paprika, tomato paste, finely chopped garlic and lemon juice. Mix well and leave to rest for at least 2 hours (ideally overnight).
After resting, thread the meat onto skewers. First place the pieces one by one onto one skewer, then secure them with a second and third skewer.
Transfer the prepared skewer to a baking dish, pour in a little water, cover with foil and bake in an oven preheated to 160 °C for about 45 minutes. Then remove the foil and bake for another 30 minutes until golden.
Slice the baked kebab from the edges and mix the smaller pieces in the baking dish with the pan juices.
Halve the pita breads, open them to make a pocket and spread each half inside with hummus. Fill with crumbled Balkan cheese, a portion of meat, torn iceberg lettuce, strips of red onion, tomato wedges and a tablespoon of Greek yogurt.
