Ponzu sauce is a sweet-and-sour Asian sauce that gives dishes a fresh citrus note. According to Asian cuisine expert Lukáš Želechovský, it goes perfectly with tataki. You can make it from just a few ingredients in ten minutes.
Pour the soy sauce, mirin, rice vinegar, orange juice and yuzu juice into a bowl, add the orange cut into slices and the wakame seaweed and mix well.
Leave the base of the sauce to marinate in the fridge for 12–24 h so that all the flavours can blend.
The next day, strain the sauce.
Store it in the fridge and use within 7 days.
Use the ponzu sauce as a dressing for salads or with tataki.
