Imperial Smoked Pork Cutlets in Batter

Císařské řízky are a fresh twist on the classic breaded cutlet. Smoked pork neck or shoulder is rubbed with garlic, salt and pepper and left to rest, then dipped in a mustard batter and coated in breadcrumbs. The cutlets fry up quickly and are served with mashed potatoes or potato salad.

Method

Rub the slices of smoked meat with garlic mashed with salt and pepper and leave them to rest for about 30 minutes.

Crack the egg into a deep plate, add the flour and mustard and mix thoroughly so that no lumps remain in the batter.

Coat the rested slices of pork neck first in the batter and then in the breadcrumbs.

04.

Heat a generous layer of oil in a frying pan and fry the cutlets on both sides.

05.

Serve with mashed potatoes or potato salad.
