Jitrnicový rozpek is a rustic speciality that brings to mind a traditional Czech pig slaughter. The mixture of jitrnice, onion and eggs cooks down into a soft mash, fragrant with caraway and pepper. It is filling and delicious with potatoes, sauerkraut or simply on fresh bread.
Peel the onion and chop it finely.
Heat 1 tbsp of lard in a frying pan. Add the finely chopped onion and fry until translucent.
Meanwhile, prepare the jitrnice: remove the skewers and cut them into slices about half a centimetre thick.
Add the sliced jitrnice to the fried onion. Stir the mixture until the jitrnice break down into a soft mash.
Once the jitrnice are softened, add the eggs and stir. Keep stirring until the mixture reaches the desired consistency. Taste and season with salt and pepper as needed.
Serve with boiled potatoes and sauerkraut, or simply spread on fresh bread.
