Khachapuri is a Georgian flatbread that is made a little differently from region to region, just like many other national specialities. The basic version is filled with Imeretian sheep's cheese similar to bryndza, and it is excellent with feta too. We have enriched ours with a juicy filling of minced beef, raisins and pine nuts, and serve it with an ajvar sauce.
