Chicken wings are coated in a marinade of oil, sweet chilli sauce, plum jam, soy sauce and garlic. They rest for at least two hours so the flavours really soak in. Then they are baked at 200 °C with pieces of butter and finished until crisp.
Prepare the marinade: crush the peeled garlic and mix it with the rest of the ingredients.
Prepare the wings: wash and dry the wings, then cut off the tips at the joint (use them for stock, for example).
Marinate the wings: season the meat with salt and after a while place it in a roasting tin and pour over the marinade.
Let the meat rest: coat the wings thoroughly in the marinade and leave them to rest for at least two hours.
Bake the wings: preheat the oven to 200 °C. Before baking, dot the wings with pieces of butter, cover and bake for 30–35 minutes.
Finish baking: then uncover the roasting tin and bake for a few more minutes until crisp. Baste with the pan juices throughout the baking.
