A savoury yeast cake from Slovakia that combines the flavour of sauerkraut and aromatic smoked pork belly. Meteník from a baking tray tastes great both warm and cold.
Grease the baking tray well with softened lard. Stir the yeast into the water, then add both flours, salt, caraway seeds and rinsed sauerkraut. Mix into a dough and arrange it immediately in the baking tray without proving.
Cut the pork belly into small cubes.
Sprinkle the dough with ground pepper, scatter over the cubes of pork belly, press them lightly into the dough and turn on the oven. The meteník will already have risen a little while you were cutting the pork belly, and by the time the oven heats to 180-190 °C it will usually have risen enough. If not, give it a few more minutes to rise before baking.
Place in the oven and bake for about 35-40 minutes. While still warm, brush with a mixture of water, oil and crushed garlic.
