A hearty Italian soup that easily stands in as a main course. Sausages, white beans and fresh vegetables come together in a rich, warming bowl. Perfect for cold days when you need something truly filling.
Pour the oil into a large pot and heat it up. Add the onion, carrot, celery and garlic and fry everything over a low heat for about 15 minutes until the vegetables soften.
Meanwhile, fry the sausages in a pan and cut them into rounds.
Stir the tomato purée into the vegetables and fry it briefly.
Pour in the tomatoes and 700 ml of stock, stir and leave to simmer over a low heat for about 10 minutes.
Stir in the sausages and beans and cook for a further 10 minutes. Season with salt and pepper and stir in the vinegar and sugar.
Divide the soup between bowls, garnish with parsley and serve.
