Nettle Dumplings with Black Forest Ham

The best recipes are often the simplest ones. That is certainly true of these nettle dumplings with Black Forest ham from chef Roman Paulus. They taste like classic bacon dumplings, only a little better, and work beautifully as a side dish or as a meal in their own right. The recipe also invites experimentation – swap the nettles for parsley, or the ham for smoked meat or bacon.

Method

Sauté the finely chopped shallot in the butter, pour in the milk and heat gently. Pour the mixture over the cubes of dry bread rolls mixed with nutmeg, salt, pepper, chopped fresh nettles and eggs. Add the flour and the ham cut into small pieces, then leave to rest for about 10 minutes.

With wet hands, shape the mixture into round dumplings and cook them in salted water for about 10 minutes.

Once you take them out of the water, cut them in half and serve with creamy spinach, finely chopped onion fried until golden in lard, and fresh parsley leaves.
