Made from fresh spring leaves, lemons and sugar, this fragrant syrup is perfect in teas and homemade lemonades. All you need to do is gather young nettle tops, let them steep for a day and then sweeten.
Boil the water with the lemons, which you have washed well and sliced into rounds. Leave to cool, then add the nettles. Stir and leave to steep for 24 hours.
Then squeeze out the mixture and strain it.
Add the sugar and citric acid and stir until the sugar dissolves. Pour into bottles and store in a cool, dark place.
