Oyster mushrooms with onion, butter and full-fat mustard make a quick meatless meal that even a beginner can manage. The mushrooms are braised until tender and then fried, so they get a lovely colour and flavour. Just season with pepper, add a dash of soy sauce and serve with bread or potatoes.
Fry the onion in the butter and oil until translucent. Add the sliced oyster mushrooms, season with salt and braise gently under a lid until tender. There is no need to add water – the mushrooms usually release plenty of liquid.
Once the juices have evaporated, fry the mushrooms, stirring occasionally, then dust with flour and fry a little longer.
Finally add the mustard and, stirring constantly, let it cook out in the mushrooms; as soon as it starts to smell fragrant, it is ready.
All that is left is to season with pepper and salt to taste, add a dash of soy sauce if you like and serve.
Serve with bread and beer or a potato side dish.
