A hearty leek soup in which leeks fried in butter make a delicate base with beef stock and a splash of white wine. Grated cheese hides at the bottom of the bowl and blends beautifully with the hot soup. It is ready in half an hour and is both warming and comforting.
Fry the finely sliced leeks in the butter until golden, stir in the flour, cook briefly, pour in the stock and the wine and simmer for 20 minutes. Season with salt, pepper and nutmeg.
Put a little grated cheese in the bottom of each bowl and pour the hot soup over it. You can serve it with fried bread croutons.
