Mayonnaise gives many dishes just the right flavour. But since we don't use it every day, it's easy to find we have none at home. Making it yourself is simple, quick and takes only a handful of ingredients.
Lightly pound the meat, season it with salt and sprinkle with caraway seeds and marjoram, then place it in a roasting tin.
Spread each slice of pork neck with mayonnaise in a layer about 4 mm thick. Slice one onion into rings for each piece of meat and grate 100 g of Gouda or Edam over each piece.
Cover the roasting tin with foil or a lid, put it in an oven preheated to 180 °C and bake for 50 minutes.
After 50 minutes remove the foil (lid), turn the oven up to 250 °C and bake for a further 10 minutes until golden. If you have one, use the hot air or grill setting.
Serve with potatoes prepared in various ways. Potatoes sliced into rings, baked in the oven and rubbed with garlic are excellent.
