Thin potato slices, rinsed of excess starch, are rolled with dried ham, sage and Parmesan. They are baked at 180 °C until they turn pink. The result is a simple, tasty starter that works well as a warm snack.
Peel the potatoes, cut or grate them into thin slices and put them in cold water to rinse off the starch.
After a while, dry them, dip them in oil, top with pieces of ham and a sage leaf, roll up and secure with a toothpick that has been soaked in water beforehand so it does not brown at the higher temperature. Sprinkle with grated Parmesan.
Bake in the oven at 180 °C until they turn pink.
