Red lentils come together with carrot, tomato purée and the aroma of curry in this soup. Ground cumin gives it a gentle, spiced note. It is ready in 34 minutes and is warming and filling. Serve it smooth or with pieces of vegetables.
Heat the oil in a pan and soften the peeled, finely chopped onion until translucent. Add the carrot cut into cubes or slices, the chopped garlic, the lentils, the curry powder and the ground cumin. Fry everything together for 2-3 minutes.
Pour in the vegetable stock, add the tomatoes (tomato purée), the bay leaf and bring to the boil. Simmer gently for about 25 minutes.
Then season with salt and pepper to taste. You can blend the soup, but not completely smooth.
