An easy oven side dish that pairs new potatoes with marinated oyster mushrooms. The potatoes roast with caraway, paprika and rosemary, and the mushrooms join them halfway through. The result is a fragrant, golden and crisp dish that just needs some vegetables or a good dip alongside.
Preparing the oyster mushrooms: Clean the oyster mushrooms and slice them into strips, cutting off the tough ends (you can keep those for soup). In a bowl, mix the oil, grilled vegetable seasoning, lovage and garlic, then leave the mushrooms to marinate for a while.
Preparing the potatoes: Wash the potatoes – leave the small ones whole and cut the larger ones into wedges. Mix them with the oil, caraway, chopped rosemary and paprika.
Baking the potatoes: Line a baking tray with baking paper, spread the potatoes on it and put it in the oven for 10 minutes at 190-200 °C.
Baking the oyster mushrooms: After about 10 minutes, push the potatoes onto one half of the tray and spread the mushrooms over the other half. Bake together until golden and crisp, about 20-25 minutes. Turn them if needed.
Serving: Serve with vegetables or a good dip.
