Roast pork knuckle is a great choice when you need to feed a crowd properly. It almost cooks itself, and whatever you don't eat in the evening tastes great in the morning. Traditionally, pork knuckle or another suitable cut of pork is served at midnight as ovar, but we think it is better to have a proper meal before the party gets into full swing. Serve it with fresh bread, mustard, horseradish and pickled cucumbers.
